BOURBON BROWNIE VOLCANO 🌋

When the Great Griddle Off theme is “Guilty Pleasure,” subtle probably isn't the direction to go.

I started with Double Neat Bourbon Brownies, cut them into bite-sized cubes, then browned them in butter right on the Blackstone until the edges were warm, buttery and slightly crisp.

Then came the guilty part.

I piled the brownie bites into a volcano, poured a warm salted caramel whiskey sauce over the top for the “lava,” and finished it with whipped cream. Add a scoop of vanilla bean ice cream and this thing was ridiculous.

WHAT WORKED

Browning the brownies in butter on the griddle was absolutely the move. The warm, slightly crisp exterior against the soft brownie inside, salted caramel whiskey sauce and cold vanilla bean ice cream hit exactly the way I wanted this cook to hit.

WHAT I’D CHANGE

I actually wanted more bourbon flavor from the brownies. Next time, I think I'd experiment with a bourbon butter bath while they're browning on the griddle. Not enough to drown them, just enough to push that bourbon flavor forward and make the whole thing feel even more intentional.

THE VERDICT

It was warm, buttery, chocolatey, boozy, messy and completely unnecessary.

In other words... Guilty Pleasure accomplished. 🌋🥃
